Next Book Club - Thursday, Oct. 7 @ 7 pm

The next Book Club selection is Candle in the Darkness by Lynn Austin.

The daughter of a wealthy slave-holding family from Richmond, Virginia, Caroline Fletcher is raised in a culture that believes slavery is God-ordained and biblically acceptable. But upon awakening to the cruelty and injustice it encompasses, Caroline's eyes are opened for the first time to the men and women who have cared tirelessly for her. Her journey of maturity and faith will draw her into the abolitionist movement, where she is confronted with the risks and sacrifices her beliefs entail.

Come join us on Thursday, October 7 at 7 pm for the discussion of this award winning novel. The meeting will be held at Ring Mountain Cafe, 1965 Cliff Lake Road, Eagan. And remember, please feel free to invite friends, neighbors,....Use this Book Club as an outreach opportunity.

Stop by the Book Club table at the SSEFC Ministry Fair on Sunday, September 12 to look at Candle in the Darkness and some other future selections. Comments on all books are welcomed and appreciated. 5 Ways to Help Jubilee

1. Household goods/clothing donation drop off at Christ Church, 12925 Johnny Cake Ridge Road, Apple Valley at the following dates/times:

Sat - 9/4 @ 8 - noon
Wed - 9/8 @ 5 - 8 pm
Sat - 9/11 @ 8 - noon

2. Help Needed: Pick up clothing after rummage sale at Hope Presbyterian Church in Richfield (7132 Portland Avenue South). We need 6-10 people on Saturday, September 11 at 8:30 am to pack clothes into boxes. Contact: Nancy Staloch: 612 833-1359 if you can help. Dave Krausert will supply boxes to put the clothes in and a trailer to haul.

3. The Children’s Area at Jubilee is looking for donations of the following items used to make children’s crafts:

fabric scraps
ribbon
twist ties
yarn
stickers
small plastic containers with lids (i.e. butter/margarine type)
paint brushes (art type)

4. Jubilee needs your prayers! We will be praying on site for Jubilee Saturday, September 4 and Saturday, September 11 at the Apple Valley Aquatic Center parking lot. Corporate Prayer 8:00 am for 1/2 hour and then we will walk the land and pray in 2 or 3's. Please bring scriptures to share your heart for our coming Jubilee guests.

5. Are you signed up to volunteer at Jubilee on Saturday, September 18? Jubilee will serve about 2000 people and 17 churches took part last year. Please come....we need to be in unity as the Church in order to offer the greatest blessings. 60 people have signed up to volunteer from South Suburban so far – WE NEED MORE! Sign up this Sunday – stop by the table in the foyer. Or just reply by email! Thank you! Next Jubilee Planning Meeting is Tuesday, August 31 at 7 pm in the Journey Room at SSEFC. Come see where you are needed to serve!

Last Park Days! Wed. Aug. 25 @ 11 am

Park Days meets for the LAST time this summer Wednesday, August 25 at 11 am. Park Days is a fun time to meet with other parents and their kids to play and fellowship at Farquar Park in Apple Valley. Parents and kids meet at 11 am to whenever you need to leave. Pack a lunch and stay awhile! Park Days also provides the perfect opportunity to invite friends and neighbors who are not from SSEFC to a casual and fun setting. So invite some friends and see you at the park for one last summer gathering!

Jubilee! - Please Volunteer, Give & Pray!

Jubilee 2010 is just a month away…Saturday, September 18, 10 am – 3 pm at the Apple Valley Water Park parking lot.

Even if you participated last year, please sign up to volunteer.

There are TWO ways to sign up:
1. Email to Susan Holmen – let her know which area you’d like (currently, we have openings in every area) or just say “flexible”.
2. Stop by the Jubilee information table in the church foyer after the Sunday services. Only 4 Sundays left before Jubilee!

Donations Needed:
Laundry detergent (64 oz bottle)
Toilet paper (4-pack)
Diapers (any)
Toiletries (any) - collection areas for these goods above in the foyer at SSEFC
Money (check to SSEFC – memo “Jubilee”)
Other items – clothing, household goods – instructions coming soon!

Please Pray!
Pray that Jubilee meets its $20,000 budget
Pray for many donations of goods, items, money and people’s time
Pray that all volunteer positions are filled
Pray for the guests that they will be blessed and touched and forever impacted by God’s love
Pray that people make decisions to follow Christ

Mouth Watering Lemon Pie Recipe to Share!

What a fabulous church picnic and baptism on Sunday! Thank you, thank you to all the planners who worked so hard to make it great fun! What a fantastic turn out of SSEFC families too! And, of course, the pie contest was a hit! By popular demand….here is the recipe for the Lemon Pie that Bernie Finne made for the contest (recipe originated by Dorothy Lacefield). HINT: To print off the recipe below, highlight with your mouse and copy and paste into Word. Then you can change the font and size, etc. to your liking. Happy baking and eating!

Crust:
3/4 cup toasted almonds , ground
6 Tbsp. butter , melted
1 1/4 cup graham cracker crumbs
1 tsp. grated lemon peel

Lemon Curd:
1 cup sugar
4 large egg yolks , lightly beaten
1 Tbsp. grated lemon peel
1/2 cup butter , cubed
1 cup fresh lemon juice
2 bars (4 ounces each) white chocolate , chopped
2 cups heavy whipping cream
8 ounces cream cheese , softened

Lemon Topping:
1/2 cup sugar
1 large egg
3 Tbsp. butter , cut up
1 large egg yolk
2 Tbsp. lemon juice
1/2 tsp. lemon peel

To make crust: Preheat oven to 350°. Butter a 10-inch pie plate. In a medium mixing bowl, combine almonds, crumbs, butter and lemon peel. Press evenly on bottom and sides of pie plate. Bake at 350° degrees for 9 to 10 minutes. Cool completely.

To make lemon curd: Bring sugar, lemon peel and juice to a boil in a heavy 3 1/2-quart saucepan over medium-high heat. Remove from heat and gradually whisk about 1/4 hot juice mixture into egg yolks; add egg yolk mixture to remaining hot juice mixture, whisking constantly until well blended. Place saucepan over medium heat and cook, whisking constantly, at least 10 or 12 minutes (mixture will be pudding-like in thickness). Add butter, in 6 batches, whisking constantly until butter melts and mixture is well blended after each addition. Remove from heat and pour mixture through a wire-mesh strainer into a bowl. Place plastic wrap directly on warm curd (to prevent a film from forming); chill 3 hours. Make about 1 1/3 cups. Microwave white chocolate in a small, microwave-safe bowl at high for 1 1/2 minutes or until melted and smooth, stirring at 30-second intervals. Beat softened cream cheese at medium speed with an electric mixer until light and fluffy. Add melted chocolate and beat until blended, stopping to scrape down sides. Add lemon curd and beat until blended. Beat heavy cream at high speed with an electric mixer until soft peaks form. Gently fold into lemon mixture. Spoon mixture into prepared crust, mounding mixture in center of crust. Chill 3 hours.

To make lemon topping: Combine sugar, butter and lemon juice in top of double boiler. Set over pan of simmering water and stir until sugar dissolves and butter melts. Beat egg, yolk and lemon peel in bowl until well blended. Gradually whisk warm butter mixture into egg mixture. Return mixture to double boiler and cook over simmering water until topping is thick, stirring constantly, about 10 minutes; do not boil. Transfer topping to bowl, whisking to smooth. Press plastic wrap directly onto surface of topping and chill until cold. Remove pie from refrigerator. Spread with Lemon Topping. Chill for at least 1 hour. Garnish with sweetened whipped cream, lemon wedges and fresh raspberries.

Next Book Club Meeting! Mon. Aug. 30 @ 7pm

How about a light-hearted fun read for the last month of summer? The next selection for book club is Never Say Never by Lisa Wingate.

Donetta and her friends from the tiny town of Daily, Texas, decide to take a giant leap from their mundane lives and go on a cruise. After they begin their journey to the ship, the band of friends learns their ship has already sailed, a hurricane is heading their way and their only choice is to turn around and become part of the massive, frenzied evacuation.

Free spirit Kai Miller joins the exodus, and there’s plenty of peril on the road from both man and nature as Kai and Donetta’s group fight their way to Daily. This exciting, often humorous tale realistically captures the chaos and heroism of small-town America in the throes of disaster as well as a can-do attitude in the aftermath.
